Nanette's Pumpkin Rolls

One large can of pumpkin makes 5 rolls.
One 15 ounce can size makes 3 rolls.

Ingredients per roll:

Dough:
3 eggs
2/3 cup of pumpkin
1 cup of sugar
1 tsp. of baking powder
1/2 tsp. of cinnamon
3/4 cup of flour
An additional 1/3 cup of sugar sprinkled on a kitchen towel I cup of chopped walnuts (optional)

Filling:
1 cup of powdered sugar
2 TBS of butter or margarine sofened
8 oz of softened cream cheese
3/4 tsp vanilla

Instructions:

Grease a jelly roll pan, lay down wax paper and grease it. Pour roll batter on paper, sprinkle nuts and bake for 15 minutes at 375 degrees.

Flip onto sugared towel, cool 5 minutes then roll up into towel and refrigerate 1 hour.

Mix filling ingredients together. Lay out chilled roll and spread the filling. Cover the roll with foil twice and freeze.

Set out 20 minutes prior to serving.
